AVOCADO DEVILED EGGS

AVOCADO DEVILED EGGS

These Avocado Deviled Eggs make a delightful appetizer or snack, perfect for gatherings or as a nutritious treat for yourself. This quick and easy appetizer is a great option to serve when you have a variety of guests with dietary restrictions. This recipe is not only keto friendly, but it’s also vegetarian, vegan, dairy free, and gluten free!

  1. Hard boil and peel eggs. Using a sharp knife, halve them lengthwise (wiping the knife in between each cut). Separate the yolks and whites. Add the yolks to a mini food processor, and place whites on a plate or egg platter.
  2. Wearing protective gloves, slice jalapeño lengthwise, then remove and discard the membrane and seeds. Chop jalapeño pepper, and set aside. Slice avocado lengthwise, and remove the pit. To cut into chunks, cut a crosshatch pattern, and scoop out the flesh with a spoon.
  3. Add the avocado chunks to the food processor, along with lime juice, Trader Joe’s onion salt, kosher salt, black pepper, chopped jalapeño, and cilantro leaves. Pulse then process until all ingredients are combined and very smooth (scrape the bowl halfway through). Taste for seasoning, and adjust if needed. Once processed, stir with a spatula to make sure all ingredients are combined.
  4. Transfer deviled egg mixture to a pastry bag fitted with an extra large star tip (9FT). Pipe egg mixture onto each egg white. Top with a light sprinkle of Tajin chile lime seasoning (about 1 pinch, or to taste). Can be served immediately, or chilled for 30 minutes (see Note #3).

Notes

Prep ingredients for Avocado Deviled Eggs recipe.

PREPARATION

Organize all your tools and ingredients before you begin. Getting all your ingredients in one place at the beginning will shorten your prep time.

STEP 1

Hard boil and peel 6 large eggs (see Note below). Using a sharp knife, halve them lengthwise (wiping the knife in between each cut). Separate the yolks and whites. Add the yolks to a mini food processor, and place whites on a plate or egg platter

STEP 2

Wearing protective gloves, slice 1 fresh jalapeño lengthwise, then remove and discard the membrane and seeds (see Note below). Chop the jalapeño pepper, and set aside. Slice 1 large ripe avocado (or two small avocados) lengthwise, and remove the pit. To cut into chunks, cut a crosshatch pattern, and scoop out the flesh with a spoon.

Add the avocado chunks to the food processor, along with 2 tablespoons fresh squeezed lime juice, ¾ teaspoon Trader Joe’s onion salt, ⅛ teaspoon kosher salt (or to taste), 1 pinch ground black pepper, 2 teaspoons chopped jalapeño, and 12 fresh cilantro leaves. Pulse then process until all ingredients are combined and very smooth (scrape the bowl halfway through). Taste for seasoning, and adjust if needed. Once processed, stir with a spatula to make sure all ingredients are combined.

STEP 4

Transfer deviled egg mixture to a pastry bag fitted with an extra large star tip (9FT). Pipe egg mixture onto each egg white. Top with a light sprinkle of Tajin chile lime seasoning (about 1 pinch, or to taste). Can be served immediately, or chilled for 30 minutes (see Note below).

Notes:

  1. Recipe can be made ahead of time if stored in an airtight container in the refrigerator for no more than 8 hours. Please note that during this time, the avocado will begin to oxidize and turn brownish (although edible, it is not very appealing). It’s best to serve them within 30 minutes to retain their color and appeal.

This version of deviled eggs uses avocado instead of mayonnaise, making them a healthier alternative to traditional deviled eggs.

Here are a few advantages of incorporating avocado as a healthier alternative:

Lower in saturated fat: Avocado contains considerably less saturated fat compared to mayonnaise. By using avocado instead of mayonnaise, you can reduce your intake of saturated fats, which are linked to increased risk of heart disease and other health issues.

Nutrient-rich: Avocados are packed with essential nutrients, including vitamins (such as vitamin K, vitamin C, vitamin E, and several B vitamins), minerals (such as potassium and magnesium), and dietary fiber.

How do you ensure the best results from this recipe?

My 5 tips to make great Avocado Deviled Eggs:

  1. Use avocados that are perfectly ripe. Overly ripe avocados will change the flavor of these deviled eggs, and the color will not be as vibrant. 

  2. Use fresh squeezed lime juice. Do NOT use bottled lime juice for this recipe. 

  3. Have your ingredients chopped and ready BEFORE cutting the avocado. Make sure to have your lime juice squeezed and ready to add as soon as you cut your avocado. That will help prevent them from oxidizing and turning a brownish color.

  4. Don’t skip the Tajin. The final pinch of Tajin chile lime seasoning adds a subtle chile lime flavor with a hint of salt that compliments the flavors in these deviled eggs.

  5. Do not let the deviled eggs sit at room temperature for too long. It’s best to chill them in the fridge for about 30 minutes before serving. This will allow the flavors to meld. If storing for longer, make sure to transfer the deviled eggs into an airtight container and refrigerate until ready to serve (no more than 8 hours).
