CHOCOLATE PEANUT BUTTER DELIGHTS

So rich and chocolatey, and exploding with peanut butter flavor, these Chocolate Peanut Butter Delights are ridiculously simple to make and amazingly delicious! All it takes is 10 minutes and 4 ingredients to make these easy and lovely sweet treats. This recipe can easily be doubled and can be made Keto.

Ingredients

Instructions

  1. Place chopped chocolate (see Notes section) in a medium bowl (or top of a double boiler pot).
  2. Add 1 inch of water to the bottom of a double boiler (or 2.5 quart sauce pan), and bring to a boil. Turn heat to low, so water remains at a slow simmer.
  3. Place the bowl on top of the double boiler and allow chocolate to melt undisturbed for about 60 seconds. When almost half the chocolate is melted, add a pinch of espresso powder, and stir gently with a silicone spatula. Stir when needed, scraping the bottom and sides of the bowl. When almost completely melted, turn off the heat, and immediately remove the bowl from the heat, and continue to stir.
  4. While the chocolate is still hot, add the peanut butter, and continually stirring to combine. Once fully combined, immediately move to the next step.
  5. Place the silicone mold tray on a baking sheet (to make it easier to transfer to the fridge). With a small spoon, fill each cup of a silicone mold (small size 24 molds) with the hot chocolate mixture. Evenly distribute chocolate mixture, then swirl the top of each one with the tip of a small spoon. Sprinkle a few chopped peanuts onto the top of each chocolate, and refrigerate until solid (about 30-60 minutes). Using protective gloves, remove the chocolates from the molds (avoid handling the chocolate as much as possible). Enjoy!

Notes

  1. Weigh the chocolate on a digital scale to get a more accurate ratio between the chocolate and peanut butter (see Step by Step Instructions in recipe web page for details on how to weigh chocolate). We do not recommend using chocolate chips for this recipe, as many brands use stabilizers to prevent them from fully melting. They can sometimes seize up and will not have the same glossy look or silky texture as melted chocolate bars. 
  2. These chocolate delights have a deep dark chocolate flavor. We used 72% cacao chocolate; however, if you prefer a not so dark chocolate, you can replace it with semi-sweet chocolate. Semi-sweet chocolate brands vary between 45% to 65% cacao. We do not recommend using milk chocolate, as the ratio of ingredients would need to be altered.  
  3. Espresso powder is optional, but highly recommended, as it intensifies the chocolate flavor.
  4. Although the topping is optional, it’s highly recommended to give these chocolate treats a more intense salty sweet peanut flavor.
  5. Store refrigerated in an airtight container or Ziploc freezer bag, separating layers with parchment paper.

Step by Step Instructions

PREPARATION

Organize all your tools and ingredients before you begin. Getting all your ingredients in one place at the beginning will shorten your prep time.

Note: Oops, we forgot to include the roasted peanuts in this photo! See Step 1 below for photo.

STEP 1

Chop 8 ounces 72% dark chocolate (see Note A below), and place in heat proof bowl (or top of a double boiler pot), and set aside. Then roughly chop 2 tablespoons dry roasted and salted peanuts for the topping (see Note B below), and set aside.

Note A: We recommend weighing the chocolate to get a more accurate ratio between the chocolate and peanut butter. To weigh the chocolate, place empty double boiler pot (or a medium heat resistant bowl) on a digital kitchen scale and zero out the weight. Then add the chopped chocolate to the bowl (or double boiler pot). Add or remove bits of chocolate to equal exactly 8 ounces. If you don’t have a scale, refer to the ounces on the package of the chocolate bar.

Note B: Although the peanut topping is optional, it’s highly recommended to give these chocolate treats a more intense salty sweet peanut flavor and crunchy texture.

STEP 2

Add 1 inch of water to the bottom of a double boiler (or 2.5 quart sauce pan), and bring to a boil. Turn heat to low, so water remains at a slow simmer.

Note: You can create a make-shift double boiler by using a sauce pan and a heat resistant bowl on top.

STEP 3

a) Place the bowl (or the double boiler pot) with the chopped chocolate on top of the sauce pan and allow chocolate to melt undisturbed for about 60 seconds.

b) When almost half the chocolate is melted, add ⅛ teaspoon espresso powder (not instant espresso), and stir gently with a silicone spatula.

c) Stir when needed, scraping the bottom and sides of the bowl.

d) When almost completely melted, turn off the heat, and immediately remove the bowl from the heat, place on the counter, and continue to stir. 

Note: Espresso powder is optional, but highly recommended, as it intensifies the chocolate flavor.

STEP 4

a) While the chocolate is still hot, add 1 cup extra crunchy peanut butter.

b) Continually stir to combine.

c) Once fully combined, immediately move to the next step.

STEP 5a

Before filling the molds, place a silicone mold tray on a baking sheet. This will make it easier to transfer to the refrigerator.

a) With a small spoon, spoon a chocolate mixture into each cup of a silicone mini muffin pan mold (small size - 24 molds).

b) Evenly distribute chocolate mixture in every cup.

c) When all molds are filled, then swirl the tops with the tip of a small spoon.

d) Sprinkle a few of the chopped peanuts onto each chocolate.

STEP 5b

a) Refrigerate uncovered until solid (about 30-60 minutes).  

b) Using protective gloves to remove the chocolates, pop each one out from the bottom of each mold (avoid handling the chocolate, as much as possible).

c) Serve and enjoy!

SERVING & STORING

  • Unlike most chocolates, this treat can be enjoyed right out of the fridge! The high fat content from the peanut butter keeps the chocolate soft and silky.

  • Store refrigerated in an airtight container or Ziploc freezer bag, separating layers with parchment paper.

Exploding with dark chocolate and peanut butter flavor!

Our Chocolate Peanut Butter Delights are ridiculously simple to make and amazingly delicious! All it takes is 10 minutes and 4 ingredients to make these easy and lovely sweet treats. With a delightfully intense peanut butter cup flavor, these little desserts are surprisingly healthy and have no added sugar. Above all, they are simply divine! 

These lovely chocolate treats are vegetarian, vegan, dairy-free, gluten-free, and keto. No need for a candy thermometer, just melt, mix, spoon into each mold, and refrigerate. Within less than one hour, you will have an amazing little salty sweet dessert that will satisfy your chocolate and peanut butter craving.  

We are so pleased that our chocolate peanut butter delights were a huge hit with our taste testers! So far almost everyone that has tasted them seems to want to make a batch for themselves right away. 

The good news about these lovely chocolates is they are pretty good for you! Dark chocolate is a powerful source of antioxidants and raises HDL (good cholesterol). Peanut butter is rich in a variety of nutrients, including protein and magnesium, and contains plenty of healthy fats, such as monounsaturated and polyunsaturated fatty acids.

Our 5 tips for making these heavenly chocolates: 

  1. For this recipe, use high quality chocolate bars or melting chocolate. You’ll be pleasantly surprised by the difference, and the shiny and silky smooth texture. Do NOT use chocolate chips, as many brands have stabilizers to prevent them from fully melting. This can sometimes cause the chocolate to seize up, and likely, it will not have the same glossy look or silky texture as melted chocolate bars.

  2. For best results, use 70% to 72% cacao (cocoa content). We used 72% cacao chocolate (Trader Joe’s Pound Plus). If you do not like dark chocolate, you can always replace it with semi-sweet chocolate. Semi-sweet is a great option and will result in a sweeter chocolate; however, the chocolates may be a little softer. 

  3. Keep your burner on low. The water in your double boiler should be at a low simmer to prevent the hot water from hitting the bottom of the chocolate bowl. And, don’t let any steam, or water droplets hit the chocolate! These tips will reduce your chances of the chocolate seizing. 

  4. Once the chocolates have chilled and solidified, avoid handling the chocolates, as much as possible. Using silicone gloves will create an extra layer between the heat of your hands and the chocolate, and help reduce the chances of the chocolate from melting on contact with your hands. 

  5. Although the espresso powder is optional, it gives a more intense chocolate flavor to this treat. If you don’t have it, it’s okay to omit.
